Z-fighting is caused by two surfaces occupying the exact same 3D space. Being in the exact same place makes it difficult for the computer to know which to show first. Due to small differences in calculations each frame, one surface can "win" the "fight" one frame, and the other surface "wins" the next frame. This can cause a flickering effect between the two surfaces that is very unpleasant, especially in VR.
